The dry anise, very fragrant and mainly for food use, finds its main development in the Tuscan area. In particular, the green anise naturally grows among the green Tuscan hills, together with vineyards that produce Chianti wines, with the olive trees, with the sunflowers and other cultivations, thanks to the good temperatures that rarely go under zero degrees Celsius. The green anise requires sun exposition and fields with mixed composition. Even in some places of Hotel Certaldo's large garden, along the Elsa river, there are some Anise plants… could it be the reason why, a stay typology at Hotel Certaldo is called Anise?

And here is one of the many possible recipes with anise:

Anise Liqueur
1 litre of alcohol at 90°
1 Kg sugar
1 lemon
100 gr anise seeds
vanilla flavouring
a small piece of cinnamon

Macerate the anise seeds, the grated skin of the lemon (without the white part), the cinnamon and the vanilla flavouring into the alcohol for two weeks. Shake it every two days. After two weeks, filter and add the sugar previously dissolved in half litre of water, shake, filter again and put into a bottle. Drink after al least 40 days.
