It is one of the oldest spices, used also by ancient Egyptians and considered the most important one, it was also cited in Aristotle’s writings.
Differently than most of the other spices, cinnamon is not obtained by the leaves or by the flowers of the plant, but it comes from the internal part of the tree bark, to be left to dry up, in order to obtain the classic stick shape that we know.

Here's a recipe with this precious spice:

Roasted veal in a tasty sauce
Ingredients:
800g Veal meat (one piece)
2 spoon of Tuscan olive oil
stock
300 g sliced ham
50 g butter
2 cloves
3 spoons of sugar Â
A very small piece of cinnamon
40 g almond without shell
2 lemons
Prepare the roast, browning the meat in few olive oil and cooking with the stock.
For the sauce: cook the sliced ham into the butter with the cloves.
Then whisk sugar, cinnamon, almonds, lemon juice and the cooking sauce of the ham, in order to obtain a cream.
Spill such cream on the sliced roast and serve very hot.
