Thyme

Thyme, comfortable and welcoming stay type, where a sober style and a discreet taste create comfort and elegance.

 

A spice much used in Tuscany to give flavour to soups, salads, roasted meats and other typical dishes of Tuscan tradition. Thyme is used also to perfume the linen, just as lavender is.
Thyme is among spices that give flavour without covering the other tastes, and it is one of the secret of some tasty Tuscan dishes that originated in the peasants’ “poorness”.
In fact in the peasant society, because of food lack, especially in the numerous and less wealthy families, spices were used to give more flavour to dishes and let rich and abundant meals be imagined in the taste. This was true for especially in the “pappa al pomodoro” (tomato soup with bread), “ribollita” (vegetables soup with bread) bean soup, onion soup, bruschetta and other typical meals; these are nowadays prepared at Hotel Certaldo for business lunches and dinners, or light lunches and light dinners.

Orecchiette with aromatic herbs

Fresh pasta: orecchiette 400 gr
Butter 120 gr
2 spoons of grated Tuscan pecorino cheese
Minced thyme 2 spoons
Minced onion herb 2 spoons
Minced parsley
Salt
Pepper

Mince all spices well. Put the butter in a bowl, working it with a ladle until to obtain a cream, adding salt and pepper.
Add all minced spices and mix. Boil the orecchiette in salt water and drain it (leaving a glass of cooking water).
Mix the orecchiette with the prepared butter cream, add the grated pecorino cheese and mix again. If the pasta would be too dry, add some spoons of cooking water. Serve it decorating the dishes with some threads of aromatic herb.
